Unio created a bittersweet vinegar made from Riesling which is produced in Lonsheim, Germany using an ancient tradition for making vinegars from fine wines. This vinegar is elegant and fruity, with a delicate acidity and a silky, fresh-tasting body. Aged six months in French oak, this vinegar carries the flavor of lemons, peaches, rosemary honey, and acacia flower to any food you use it on. It's delicious in vinaigrettes, whisked into cold soups, or mixed with basil and olive oil to create a delicious marinade for chicken. Our local restaurant C Street Bistro uses Bittersweet Reisling Vinegar as a quick pickling. Perfect for a quick side dish for your next dinner.
C Street Quick Pickles
1 onion - sliced very thin
2 carrots - sliced into thin matchsticks
1 cucumber - peeled, seeded and sliced thin
1 Cup Unio Bittersweet Reisling Vinegar
1 Tablespoon sea salt
2 Tablespoons granulated sugar
Mix the Reisling Vinegar, salt and sugar together in a pan. Warm until the salt and sugar dissolve. Add the vegetables in a jar and cover with the Reisling Vinegar. Keep refrigerated for 2 days.
