Since 1640 these Raspberry Almond Champagne Wafer gourmet wafers, traditionally known as oplatky, have been made by hand in the Czech Republic spa resort destination of Karlovy Vary, also known as Carlsbad.  Fashionable among Europe's elite, oplatky were eagerly consumed by the rich and famous.  Some notable wafer eaters include Chopin, Wagner, Peter the Great, Goethe, Edward VII of England and the Kaiser Wilhelm himself.

Today there are only a handful of bakers who still use the traditional recipe and techniques that are adhered to creating this scrumptious treat.
