This Artichoke Tomato Bruschetta Spread & Dip is a zesty, Mediterranean-inspired blend of sun ripened tomatoes and artichokes with fresh garlic and herbs.  Use this on toasted breads or crackers; toss with hot or cold pasta dishes; use on seafood, grilled meats or veggies or even top your baked potato for a low-cal treat.  We like to use this Artichoke Tomato Bruschetta on a toasted baguette, sprinkle with fresh feta cheese and place under the broiler until the cheese melts.  Yummy!
