 WEDNESDAY May 15 6:30 p.m.   MORE Mediterranean Cooking Foodie Favorite! In this class we will learn how to make Greek Lemon Rice Soup, Chicken with Orzo and Mediterranean Salad with Balsamic Chicken.
 THURSDAY June 13 6:30 p.m.   Farmer's Market Basket   In this class we will meet at the local Grower's market in the morning to shop then meet back at the Jacksonville Mercantile that evening to make a meal from our found treasures.  Shopping in the morning is optional.
THURSDAY June 27 6:30 p.m.  Patio and Picnic Foods  In this class we will learn some portable, make - ahead small bites that have big flavors.  White Bean puree with caviar, fig bread with aged gouda and marcona almond spread and an Italian twist on Thai Spring Rolls.  Perfect for picnics on the Britt hill or relaxing with your friends at home.
WEDNESDAY July 24 9 6:30 p.m.   Sauces made easy   In this class we will explore how to create different sauces and how to build on standard sauces to create different flavor profiles. Learn Béchamel, Green Peppercorn Sauce and Crème Anglais.  One of our most requested classes.
THURSDAY August 15 6:30 p.m.   Beans Beans!   In this class we will explore how to create different meals using different types of legumes.  Learn the difference in lentils and the best way to dress up the lowly legume to create wonderful meals.  Lentils du Puy with tomato, Corona Beans with mushroom and Heirloom beans from Italy as a burger substitute.
 THURSDAY September 19 6:30 p.m.   Paella!  In this class we will explore why the heirloom Bomba Rice is used in Paella and the history of Paella.  We'll make a Paella and then eat our Paella.  How great is that??  

Cancellation policy

Because food must be purchased and class instruction prepared in advance, class fees for cancellations made less than 48 hours prior to class are not refundable. With more than 48-hour notice of a cancellation, credit may be applied to a future class or fees can be refunded. "No shows" will not receive a refund or credit. If enrollment for a class is insufficient, Jacksonville Mercantile reserves the right to cancel the class and will notify registered students of the cancellation. In the event of a cancelled class, students may choose to take another class on our current schedule or be fully refunded.
