Christmas Bush Honey is a distinctive creamed honey is sourced from nectar derived from Tasmania’s Christmas Bush, which flowers, as you may have guessed from the name, around the Christmas period. The Christmas Bush from Tasmania are prickly bushes covered in millions of tiny white flowers the shape of a bursting stars. Its flavor is mellower than the Leatherwood Honey from the same company, slightly herbaceous with marzipan tones and the flavour lingers in the mouth. The Christmas Bush Honey is a thick honey with caramel like colouring and consistency, it looks a bit like Dulce de leche.
The honey has an enticing, slightly floral aroma, with a taste reminiscent of caramel fudge and is a delicious addition to pastries and desserts.
Because such low temperatures are used to extract the honey it is naturally crystalized. This imparts a buttery and spreadable consistency not found in honeys subjected to high temperatures. Also since the Christmas Bush honey is harvested at low temperatures it allows the honey to show all of its delicate floral essence. This honey is very heat sensitive so it is packed straight from the extractor. Consequently, the honey may contain small particles of bees wax. This may be why the texture is bit more "solid" than Leatherwood Honey.
