Whole chesnuts cooked in a vanilla laced syrup makes a wonderful treat to be enjoyed over ice cream, crepes or on top of yogurt or fresh ricotta. To make the equivalent of Marrons Glaces, just remove the chestnuts from the syrup and place onto a rack to drain. Turn over every day and when the outside looks candied wrap in waxed paper and enjoy. The syrup can be used in coffee, over fruit salads or on ice cream. The possibilites are endless.
