This traditional wine vinegar produced by La Cave de L'Abbe Rous from France is made from the naturally sweet wine of Banyuls which has aged in oak casks for 4 years under the Mediterranean sun. After acetification, the vinegar is then matured in barrels for 12 months which conserves part of the natural sugar from the grapes. This 5 year process yields a complex and mellow flavor which has hints of rich aromas of walnut, gingerbread, beeswax, vanilla and liquorice.
